Chicken Meatloaf

  • 1 ½ lbs ground chicken
  • 1 cup panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 large egg
  • ⅓ cup milk
  • 1 tbsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ cup finely chopped parsley (optional)

Parmesan Cream Topping

  • ½ cup mayonnaise
  • ¼ cup grated parmesan
  • 1 tsp garlic powder
  • ½ tsp Italian seasoning
  • Pinch of pepper


👩‍🍳 How to Make It

1. Prep the Meatloaf Mixture

  1. Preheat oven to 375°F.
  2. In a large bowl combine ground chicken, panko, parmesan, egg, milk, seasonings, and parsley.
  3. Mix gently — do NOT overmix to keep it tender.


2. Shape & Bake

  1. Transfer mixture to a lined baking sheet or loaf pan.
  2. Shape into a loaf.
  3. Bake uncovered for 30 minutes.


3. Add Parmesan Topping

  1. Mix mayo, parmesan, garlic powder, and Italian seasoning.
  2. Spread over the meatloaf after the first 30 minutes of baking.
  3. Return to oven and bake another 15–20 minutes, until internal temp hits 165°F.


4. Slice & Serve

Let rest 8–10 minutes before slicing.
